CHEFS WAREHOUSE HAMBURG

Where great cooking starts behind the scenes

Truly remarkable food service starts long before the first plate comes out of the kitchen. The casual dining restaurant Chefs Warehouse relies on a perfectly coordinated interplay of people, processes and technology, supported by the MEIKO COMFORT R. The result is a guest experience that goes far beyond outstanding food – day in, day out. We paid a visit to find out more.

A RESTAURANT WITH A CLEAR PHILOSOPHY

Chefs Warehouse is one of South Africa’s most successful restaurant concepts, and in early 2026, it opened its first branch in Germany. Located in Hamburg’s historic Speicherstadt district, the casual fine-dining restaurant offers an innovative sharing concept, outstanding regional produce and a consistently sustainable approach to cooking.

The moment you step inside, it’s clear what makes Chefs Warehouse so special. Combining historic brickwork with modern design, it features a community table weighing more than 800 kilograms at its heart. This is fine dining without unnecessary formality, but still true to exacting standards. Instead of taking the conventional à la carte route, it focuses on shared enjoyment, shared moments and remarkable taste sensations.

Right from the start, managing director Lina Koch understood that Chefs Warehouse had to be far more than your usual restaurant.

Our goal was to create a place that brings together food, craftsmanship and design to make something truly special. And that’s exactly what we’ve done.

QUALITY BEGINS LONG BEFORE THE FIRST DISH IS SERVED

At Chefs Warehouse, quality starts long before the plate reaches the table. It begins with careful product sourcing and skilled preparation, and ultimately shapes every step taken behind the scenes.

Sustainability is a key part of the concept. Nose-to-tail and root-to-fruit are not just empty promises, but rather firm beliefs that determine how the kitchen is run. A real effort is made to use every part of the product, both out of respect for its origins and a genuine conviction that this is how things should work.

The sharing concept comes with its own particular challenges. Plates, bowls, serving dishes and glasses go back and forth between the kitchen and dining area far more frequently than in a traditional restaurant. That means every part of the process has to be smoothly integrated into the overall experience, from the first touch to the final plate.

Every day in our kitchen revolves around precision and timing. The more we can rely on the processes in the background, the more we can focus on our craftsmanship and the quality of our dishes.

A WAREWASHING SOLUTION THAT FITS THE KITCHEN

The hunt for the right solution led the team to the MEIKO COMFORT R. Its performance was certainly an important consideration, but they were especially impressed by its ability to adapt to the available space and to the rhythms of a kitchen that experiences constantly changing requirements during each service.

It’s the COMFORT R that flexibly adapts to the restaurant’s workflows, not the other way around. Whether plates, bowls, serving dishes or glasses, the machine gets the full range of washware clean: efficiently, ergonomically and without wasting resources. The rack type dishwashing machine slots seamlessly into the restaurant’s everyday working environment and offers a level of reliability that gives the team the reassurance they need, day in, day out.

MORE TIME FOR HOSPITALITY

Restaurant manager Rajeef Jayaratnam focuses most of his attention on the front of house and the dining experience. This is where the real task lies: making guests feel welcome, and ensuring they are happy to linger and keen to return.

We want our guests to have a memorable experience. If they’re keen to come back, and if they see Chefs Warehouse as a kind of second home, then we as hosts are doing a pretty good job.

WHEN EVERYTHING COMES TOGETHER

Chefs Warehouse is a striking example of how exceptional food service involves far more than just excellent produce or creative dishes. What matters is how people, precision craftsmanship and reliable processes all work together, from carefully selected products and the kitchen environment through to the processes behind the scenes.
